I went to see my father today at the nursing home. He is 91 years old and doing reasonably well for his age. I decided to accompany him to the dining hall. Guess what they had tonight for dinner????

Cinnamon Chicken! No, I'm not lying. I started snickering the moment they offered it to him. The helper gave me a puzzled look and I tried to explain but I think she thought I was nuts. As she walked away, I glanced at her name tag. Do you know what her name was???? Laura (hee-hee). I'm still laughing!

I received the slight smile as if she understood, but really didn't. Then she turned and walked quickly away. I would have loved to known what she told the other workers in the kitchen.

It smelled really good, but due to my dad's diet they have to grind up the chicken. It didn't look that appealing, but the smell of cinnamon makes me want to give it a try some time. Does anyone out there have good recipe?

That was really funny Paula, I would've fell off my chair dying laughing.

I don't have a cinamon chicken recipe but I did have a dish of chicken and cinamon waffle at a Southern restaurant once and it was very good. I think cinamon makes everything so homey.

Well, according to the menu I guess the recipe is Greek, or at least that's what they called it(I checked when I went up to see dad yesterday). I'll have to start looking through some Greek cookbooks I guess. And, yes, I have separated the cinnamon from the cayan pepper in my spice drawer.

Hahaha That was a fun story! Trying not to laugh too loud, or the people around me will think I'm nuts!

Yeah, I'd love to try it! I've searched the internet but nothing that looks worth trying has come up. Can you post it for me or send it to my email? I'm still snickering after all these days.


I've been on my best behavior at the home since that time, however. It's funny how things come back from the past just out of the blue. I have never heard of cinnamon chicken before little house and I have never seen it on any menu of any restaurant I've been to; And to have it be served at a nursing home by someone named Laura just cracks me up.

Ok, tomorrow turned into 4 days . Well, here's the recipe. Not to scare you off, but I've translated it from Danish but I think it's right. Hope you enjoy it!

Cinnamon Chicken

Ingredients:
4 chicken breasts
1 tsp. cinnamon
4 tbsp. lemon juice
1 tbsp. lemon peel
4 tbsp. olive oil
Salt and pepper

Put the chicken breasts in a plastic bag with cinnamon, lemon juice, lemon peel, olive oil, salt and pepper. Knead the ingredients, and let the chicken breasts marinade for an hour. Fry on a grill pan for about 5 minutes on each side.

I finally tried the recipe and it was really good! It is lemon cinnamon flavor and very tasty. I have to think of a good vegetable and side dish to go with the cinnamon chicken now. Thanks for posting. Now I can say I've actually tried it. You should try it, too.
